We all have those days where we want to cook something special for ourselves or our friends and family but don’t have that much time on our hands. One of my favorite bloggers Deliciously Ella inspired me to develop a quick and easy recipe that will definitely wow the crowd. These deliciously spiced chickpea pancakes are a great vegan and grain free alternative to regular salty pancakes or even pita bread. To be honest they taste very good on their own but topping them off with my amazing avocado cream, you will take them to the next level. Another thing, which I also love about these pancakes, is that they are very rich in protein and served with avocado cream make a very hearty and full filling meal.
For the pancakes:
150 grams chickpea flour
200 ml. Water
4 sundried tomatoes(chopped into small pieces)
1/4 of a cup finely chopped fresh basil
Red chili flakes (optional)
For the avocado cream:
A few Basil and cilantro leafs
1 green chili pepper
1tbsp. Olive oil
What to do?
For the pancakes all you need to do is to combine all your ingredients into a bowl, add water and stir until the consistency looks like loose pancake batter. Afterwards heat a pan and cook as you would regular pancakes. For the avocado cream, just add everything in a blender and blend until smooth. When you have all your components ready, it is time to plate. Place a pancake onto a plate, smooth some avocream on top and for an even better taste – chop up a few tomatoes, season them with balsamic vinegar and olive oil and finish the dish with them and some toasted pine nuts. There you have it a quick weekly lunch or dinner meal, which will not only satisfy your stomach but also taste buds.
