Roasted Apricots with vanilla yoghurt

Summer is the best season for fresh produce. The local markets are full with beautiful fruits and vegetables waiting to be eaten raw or even cooked. This is probably one of the reasons why I love summer so much. It is just so easy and accessible to get a delicious piece of fruit and turn it into an amazing meal. This is what inspired the dish that I am sharing with you today. It was a hot day and the only thing that I had left in the fridge were apricots and a little bit of greek yoghurt, so I decided to experiment a bit and make something special out of these simple ingredients. I roasted the apricots with some spices, topped them off with vanilla yoghurt and just enjoyed all the delicious flavours being released while eating this sweet treat. This dessert is great to serve at friends or family gathering because it is extremely simple to put together but at the same time will impress your guests.

Ingredients:

6 apricots

2 tbsp. honey

1 tbsp. olive oil

1 tsp. vanilla extract

1 tsp. Cinnamon

fresh rosemary

1/4 cup walnuts

For vanilla yoghurt:

1/2 cup greek yoghurt

2 tbsp. vanilla maple syrup or honey and 1 tsp. vanilla extract

What to do?

  1. Cut apricots in half, mix in with the ingredients listed above in place in a baking tray.
  2. Roast apricots in a preheated to 180 C oven for 20-25 minutes.
  3. Meanwhile mix yoghurt with vanilla and sweetener and leave in the fridge.
  4. When your apricots are ready, take them out of the oven and serve warm topped with the vanilla yoghurt.
