I’m sharing with you today a little bit of my heritage. This is “mish-mash”, a traditional Bulgarian dish that has been consumed and enjoyed for ages. It’s simplicity in ingredients and lack of complexity is what makes it so delicious. Not only that this is an extremely easy recipe to make, but also every time I have it, it takes me back the memory lane and makes me feel like home.
Ingredients
(2 portions)
1 can of tomatoes(if you can’t find seasonal tomatoes), either wise 3 fresh tomatoes
1 onion
200g red or green peppers
1 garlic clove
4 eggs
100 g feta cheese
1 tsp. paprika
Parsley(optional) or any other greens
2 tbsp. Olive oil
What to do?
As I already mentioned the specialty of this dish hides behind its simplicity. You only need to cut your vegetables(peppers and onions) lengthwise, sautée them until they become nice and soft. When they seem ready, season nicely with salt, pepper and paprika. Afterwards add your tomatoes and simmer until almost all the liquid from the tomatoes has evaporated. Finally, add your eggs(don’t scramble them beforehand), leave to them to poach slightly in the saucy vegetable mixture and stir through. At the end crumble your cheese in and top of with your leafy green vegetable of choice.
